After an interruption, the Square, the Cabrel family's hotel-restaurant has reopened.

The beautiful building, in the heart of the village, has belonged to the Cabrel family for 25 years.

Aurélie Cabrel, Francis's daughter, has teamed up with Julien Amat, a chef who has worked for prestigious houses and whose ambition is to reclaim the Michelin star he earned under Michel Latrille and lost in 2010.

Through Michel Latrille, the former chef of the Square who had one star in the Michelin guide, Aurélie Cabrel called on Julien Amat, former chef of the Carré Gourmand in Boé, to take over the management of the restaurant.

Julien did his apprenticeship in his father's restaurant in Rodez, "an important step in his professional career" he says, then he started a starred career working at Michel Chambran in Pont de Lizère, then at Michel Trama in Puymirol, then at the Grand Hôtel de Saint-Jean-de Luz with Nicolas Masse, then at the Sources de Caudalie with Nicolas Masse and finally at the Carré Gourmand for 5 years as a chef.

The cuisine is rather gastronomic and tinged with originality.

The Square, now in the hands of a young tandem of 31 years old, wants above all to rediscover the spirit of conviviality that the Astaffortais and amateurs of the place have been fond of for many years.

Aurélie Cabrel has put her singing career on hold, while Francis continues to tour the stages and studios and also watches over his festival "Les voix du Sud", which takes place every year in ... Effort.
