The Limousis cave and its unique wonder

Discovered in 1811, the Grotte de Limousis is the largest cave in Cathar country, and is home to a marvel unique in the world: an extraordinary Aragonite "lustre", 10 m in circumference and 4 m high, the largest collection of Aragonite crystals in the world, and adorned with crystals of astonishing whiteness.
But before discovering this treasure, you'll have followed a 1km 200-long underground trail, passed through seven sumptuous chambers and admired two underground lakes and thousands of concretions.
The ambient temperature is 15° all year round, enabling the Limousis winegrowers to age their wine here.

 

Wine in the cave...
From Minervois or Cabardès terroirs, the Améthyste cuvée from Cave Alliance Minervois is aged in oak barrels in the cave.
A constant temperature of 14° and hydrometry ensure optimal aging and an intense fruity taste.
The wine is preserved in "Les Coralies" 700-liter terracotta jars, a collaboration with the Lauran Cabaret cellar.
From old vines planted on sandstone soils, a blend of Carignan (70%), Grenache and Syrah, harvested in small crates and vinified in the traditional way in small vats, with no other artifice than the work of man combined with the very special conditions of the Limousis cave.
