Today, it is an eco-museum that shows, thanks to mannequins and tools, the life of these families who slaughtered on the spot, sold and cooked on the first floor, and lived on the upper floors, while drying hundreds of sheep and pig skins in louvered attics. Tools, photos of the street in full activity, writings, furniture testify to this time and this community.
The first floor of the houses is dedicated to the professional activity of the owners with a slaughterhouse and a store, and the floors are reserved for family life.
The chimney is used for heating but also the domestic kitchen for the preparation of dishes intended for sale: tripe, pâtés, chestnut puddings, crickets and of course, the famous "Petits Ventres", lamb's feet cooked in the belly of the animal.
At the back of the house is the butcher shop where the butcher slaughters the animals and cuts up the meat.
Some small intermediate rooms, the "salting rooms" allow the meat to be preserved away from heat and light.
Finally, in the attic called galetas, the butcher dries bladders and hides in the open air thanks to large openings in the woodwork called souliès. He can also store the hay there.
